Lazy Cow – Spill the Mexican Beans

Spilling the Mexican Beans


Ingredients needed if you can get hold of them or hopefully in your cupboard

thinly slice an onion or two

  • crush 2 garlic cloves

  • a yellow pepper & cut into bite size chunks

  • ½ tsp hot chilli powder or flakes

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 400g tin tomatoes

  • 2 tbsp tomato puree

  • Drain a tin mixed beans give them a quick rinse

  • loads of fat-free Greek yogurt

  • Cut a a lime into wedges – remember to ask mammy or aunty to help with the knife

  • S&P

How to cook it otherwise known as method


  • Spray a large frying pan with oil on a medium heat

  • Throw in the onion and garlic and cook gently for a few minutes, stirring regularly – don’t go off & watch the telly

  • Chuck in the pepper and cook for two minutes or until you like the colour

  • Stir in the spices and cook for a few seconds, then add the tomatoes, tomato purée and mixed beans

  • Glug in 300ml cold water and bring to a gentle simmer

  • Season with a S&P a cook for 30 minutes, give it a stir if you can remember

  • Add the rice to a boiling pan of water & simmer for say about 25 mins

  • To make the salsa, mix the tomato, coriander and spring onions together in a bowl – I forgot to put that on the ingredient list!!

  • Spoon the beans over the drained rice & add the salsa.

  • Serve with the yoghurt and lime wedges if you have any
