Pearl’s Curry Chicken
Serves: 4 hungry adults or 2 REALLY greedy ones…
Thighs and legs work best! (if using frozen make sure you defrost)
1 large or 2 small brown onion(s)
Peeled and chopped
Peel and cut 2 large potatoes into medium chunks
½ tin of chopped tomatoes
You can chop and use fresh tomatoes if they are on their way out
2-3 cloves of fresh Garlic
Smashed and chopped to release flavour! Alternatively use 2 tsp of garlic powder.
2 chicken bullion/alternatively 2 tsp of chicken seasoning
Crushed chilli flakes to taste alternatively chilli powder
Enough water to cover the chicken!
Add all the ingredients (except the potatoes) to a large pot and bring to a rapid boil
Stir once, then turn down to a simmer and leave for 20-25 mins with the lid on
Add potatoes and turn up the heat!
Leave lid off and bring to a boil
Give it a little try… add S&P to taste
1 ½ mugs should feed 4 people
Wash 3 times (in warm or cold water) until water runs clear-ish
Leave to soak in fresh water until ready to cook
Now Cook the Rice!
Cook until rice is soft then turn fire off
Leave on hob to cook in residual heat
Place some rice in a bowl, add your delicious curry chicken
